Packed full of protein and nutrition for optimum health.  It’s Low carb too so this tucker will get you lean and mean in no time!

Time it takes: 10 minutes
Serves 2

1 x 185 g tin tuna in water, drained
1 organic / free range egg
1 sliced spring onion
Black pepper to taste

In a bowl, combine the tuna, egg, spring onion and pepper.  Heat a non-stick pan over a medium heat and add a little olive oil.  Place 3 spoonfuls of the tuna mix into the pan and cook for 2 - 3 minutes each side until golden crisp and cooked through.   Serve the fritters in a stack alone or with baby spinach and tomato.
