We’ve had a few requests for a healthy ice cream. Well here it is! Delicious, healthy and chock full of nutrition to support muscle and a healthy immune system. Bananas are a terrific energy food and a great source of potassium, an essential mineral for maintaining normal blood pressure and heart function. They also act as in emulsifier and make a creamy ice cream. Fresh made coconut milk is basically the juice and flesh of 1 young coconut blended or alteratively you can buy organic coconut milk from your health food store - A very good source of MCT fats that get transported to the liver to be used up as energy also great for healthy skin and thyroid. You only need a scoop to satisfy and it tastes amazing!
Serves 12
250 ml organic coconut milk
2 tbsp BSc Vanilla WPI
4 ripe eco bananas, chopped into small chunks and frozen
½ tsp vanilla bean paste
In a food processor combine the banana, coconut milk, WPI and vanilla. Process until the mixture looks like ice cream and forms a lovely creamy texture. Serve immediately or store for about 1 week in the freezer. When removing from the freezer, allow the ice cream to sit for about 10 minutes to soften.
